Cacio di Pienza rosso is a cheese produced with only sheep's milk. Before processing, the milk is pasteurized. It is transferred to special tanks where the processing to obtain the cheese begins. The added ingredients are: selected lactic ferments and rennet. The crust treatment with tomato sauce makes it even more particular in flavor.
